- This is an Indian version of tzaziki, called Raita
- (I hope I have not forgot anything ?)
-
- 1l stiff yogurt
- 1/2 carrot
- 1/2 large cuke
- 1/2 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander seeds crushed
- 3 good sized fresh garlic cloves crushed
- A couple of drops of lemon
- 1/2 teaspoon mint
-
- Shred the carrot, matchstick the cuke
- roast the seeds until slightly smoking and then mortar and pestle fine
- (just the cumin seeds and the coriander seeds)
- Also add something hot but fresh tasting - fresh green chili minced (just one)
-
- Mix all together with a spoon - do not beat at all
- Refrigerate
-
- Cheers, Colin.
